THE CRAVING IS REAL

Beans bring fiber in place of a meat-heavy filling. A measured amount of cheese keeps saturated fat adjustable; tortillas and salsa can supply substantial sodium.

What you’ll need

Ingredients

Let’s do this

  1. 1

Warm the beans, cumin, paprika, and water in a small saucepan for 3–4 minutes. Mash about half the beans so the filling stays together.

  2. 2

Toast the corn tortillas in a dry skillet over medium heat until crisp, about 2 minutes per side. Warm the large tortillas briefly so they bend.

  3. 3

Spread half the beans in the center of each large tortilla, keeping the pile no wider than the small tortilla. Add cheese, a crisp corn tortilla, lettuce, tomato, yogurt, and salsa.

  4. 4

Fold the edges of each large tortilla inward in overlapping pleats to enclose the filling. Keep a hand on the seam.

  5. 5

Heat oil in a skillet over medium heat. Place the parcels seam-side down and cook 2–3 minutes per side until golden and sealed.
