Heat the oven to 425°F and line a baking sheet. Beat the egg and water in one bowl. Mix panko, oil, paprika, garlic powder, and salt in another.

Dip chicken pieces in egg, let excess drip away, then press into crumbs. Arrange with space between pieces. Discard leftover raw-chicken coating.

Bake for 12–16 minutes, turning halfway, until the thickest nuggets reach 165°F on a thermometer.

In a clean bowl, stir yogurt, mustard, and honey into a dip.

Divide the nuggets between two plates and serve with the dip. Keep the dip separate until dunk time.
