Bring the broth, ginger, and mushrooms to a simmer in a saucepan. Cook for 3 minutes.

Add edamame and simmer for the time directed on its package, usually 4–5 minutes. Add noodles at the point needed for their own package cooking time.

Stir in bok choy for the final 2 minutes, until the stems are tender and leaves wilt.

Put miso in a small bowl, stir in a little hot broth until smooth, then mix it back into the soup off the heat.

Add sesame oil and vinegar. Divide between bowls and finish with scallion. Slurping policy: extremely relaxed.
