    Cook the oats

    Combine the oats, milk, water, ¼ teaspoon cinnamon and salt in a saucepan. Bring to a gentle simmer, then cook over medium-low heat for 6–8 minutes, stirring often, until the oats are tender and creamy.

    Slice the bananas

    While the oats cook, cut the bananas into rounds about ½ inch (1 cm) thick.

    Brown the topping

    Melt the butter in a nonstick skillet over medium heat. Add the banana rounds in a single layer and cook undisturbed for 2 minutes. Turn gently, sprinkle with the brown sugar and remaining ¼ teaspoon cinnamon, and cook for another 1–2 minutes until golden and syrupy. Reduce the heat if the sugar darkens quickly.

    Serve

    Divide the oats between two bowls and spoon the warm bananas and pan syrup over the top. Serve immediately.

Save some for later

Cool leftovers promptly, cover and refrigerate at 40°F (4°C) or colder within 2 hours for up to 3 days. Reheat the oats thoroughly with a splash of milk or water. The banana topping is best freshly made but may be refrigerated with the oats.
