A LITTLE KITCHEN BACKSTORY

Let’s make something lovely.

The birthday photo is a tiny edible beach: blue water, a sandy patch, candy details and a proud number eight on top. This recipe turns that decorating idea into a manageable home baking project.

A spoon makes the waves and crushed cookies make the sand. Shape a few fondant fish if you feel crafty, or let small candy shapes do the work. The ocean has never required perfectly smooth frosting.

Let’s do this

    Prepare the pans

    Heat the oven to 350°F (175°C). Grease two 8-inch (20 cm) round pans at least 2 inches (5 cm) deep and line the bases with parchment. Whisk the flour, baking powder and salt together.

    Mix the cake

    Beat the butter and sugar for 4 minutes until paler and fluffy. Beat in the eggs one at a time, scraping the bowl, then add the vanilla. On low speed, alternate the flour mixture in three additions with the milk in two, stopping as soon as combined.

    Bake and cool

    Divide between the pans and smooth the tops. Bake for 30–35 minutes, until the center springs back and a skewer comes out clean. Cool in the pans for 15 minutes, then turn onto a rack and cool completely for about 75 minutes.

    Whip the frosting

    Beat the butter until smooth. Gradually mix in the powdered sugar, then add 3 tablespoons milk, vanilla and salt. Beat until creamy, adding the final tablespoon of milk only if needed. Set aside a small spoonful of white frosting for attaching decorations. Tint most of the rest pale blue and a small portion deeper blue.

    Stack and coat

    Level any domes once the cakes are cold. Set one layer on a sturdy serving plate, spread about 1 cup frosting over it and top with the second layer. Spread a thin crumb coat over the cake and chill for 30 minutes. Cover with the remaining pale blue frosting.

    Make the shore

    Sweep the back of a spoon through the frosting for ripples. Add the darker blue along the bottom or across one part of the top as waves. Gently press cookie crumbs into a small crescent of frosting on top to make the beach.

    Add a little sea life

    Use white chocolate pieces for a border or small shells. If using fondant, roll thinly and cut simple fish, stars or initials; a small knife works without special cutters. Attach with the reserved frosting and finish with edible pearls. Keep decorative pieces light. Add any birthday candle just before serving, and remove candles and all nonfood decorations before cutting.

Cool the cakes fully before decorating; even slightly warm sponge can soften the frosting.

Add the cookie sand close to serving if you want it to stay crisp.

Use coloring, pearls and glitter specifically labeled edible. Craft glitter is not a food decoration.

Save some for later

Cover and refrigerate at 40°F (4°C) or colder for up to 4 days. Let individual slices soften for about 30 minutes before serving. Add crumb sand and delicate decorations near serving time; refrigeration may soften them.
