Let’s make something lovely.

This macaroni stays with the spoon from beginning to end: no baking dish, no crumb topping, and no need to persuade the oven to join in. A loose cheese sauce gives the little elbows plenty of room to settle.

The photo shows a pot of creamy macaroni being stirred. This proposed version uses a simple butter-and-flour base and two melting cheeses, making it a separate recipe from the golden baked macaroni casserole.

Let’s do this

    Cook the elbows

    Bring a large pot of water to a boil, add the teaspoon of salt and macaroni, and cook according to the package until just tender. Reserve 1/2 cup cooking water, then drain.

    Start the sauce

    While the pasta cooks, melt the butter in a medium saucepan over medium-low heat. Whisk in the flour and cook for 1 minute, stirring continuously, without letting it brown.

    Whisk and thicken

    Gradually whisk in the milk, starting with a small splash to smooth out the flour paste. Add the mustard powder, salt, pepper, and paprika. Cook for 5–7 minutes, stirring across the bottom and corners, until the sauce gently bubbles and coats the back of a spoon.

    Melt the cheeses

    Take the saucepan off the heat. Add the cheddar and Monterey Jack a handful at a time, stirring each addition until melted before adding the next. Do not boil the sauce after adding the cheese.

    Fold and serve

    Stir the drained macaroni into the cheese sauce. Add reserved pasta water 1 tablespoon at a time until the sauce is a little looser than you want on the plate; the pasta will absorb some. Serve immediately while creamy.

Grate the cheese before you start cooking so it is ready as soon as the sauce leaves the heat.

A flexible spatula helps reach the saucepan corners where thickened milk can catch.

Choose medium rather than very aged cheddar if a smooth melt is the priority.

Refrigerate in shallow containers within 2 hours, or 1 hour above 90°F/32°C. Keep at 40°F/4°C or below for 3–4 days. Add a splash of milk and reheat to 165°F/74°C while stirring.
