Carrot & Celery Vegetable Soup

Carrots, celery, and onion make a dependable little kitchen trio: one sweet, one crisp, and one determined to make you cry before dinner. A slow sauté gives them a softer, sweeter start before the broth goes in.
The camera caught this pot during cooking, so this recipe proposes a straightforward soup from that beginning. There is no finished bowl in the photograph; the broth, seasoning, and final consistency are choices for this version.

Soften the vegetables
Heat the oil in a 4- to 5-quart saucepan over medium heat. Add the onion, carrots, and celery. Cook for 9–10 minutes, stirring often, until the onion is translucent and the vegetables begin to soften. Reduce the heat if the onion starts to burn.

Add the aromatics
Stir in the garlic and thyme and cook for 30 seconds. Pour in about 1/2 cup of the measured broth and scrape up any golden bits from the bottom of the pot.

Build the soup
Add the remaining broth, bay leaf, salt, and pepper. Raise the heat to bring the soup to a gentle boil, then reduce it to maintain a steady simmer.

Simmer until tender
Partly cover and simmer for 18–20 minutes, stirring once or twice, until a fork slides easily into a carrot slice. If the vegetables are still firm, continue in 3-minute intervals.

Finish the bowls
Remove and discard the bay leaf. Stir in the lemon juice and parsley. Taste a cooled spoonful and add more salt only if needed. Ladle into four bowls and serve hot.

Slice the carrots more thinly than the celery so both become tender at about the same time.
A light sauté is enough here; heavily browned vegetables will make a darker, stronger broth.
Add the lemon at the end so its fresh flavor stays noticeable.
Portion into shallow containers and refrigerate within 2 hours, or 1 hour above 90°F/32°C. Keep at 40°F/4°C or colder for 3–4 days. Reheat to 165°F/74°C. Add a little water if the broth has reduced.
