Let’s make something lovely.

Cheese pizza is a useful place to learn how dough behaves because there are only a few toppings to manage. A clear border gives the crust space to rise, while a thin sauce layer keeps the center from getting weighed down.

Low-moisture mozzarella melts without releasing as much water as fresh mozzarella. The little sprinkle of Parmesan is proposed for a sharper finish, but the main idea stays simple: dough, tomato, and cheese.

    Make the dough

    Combine the flour, yeast, sugar, and salt. Add the water and tablespoon of oil, mix into a rough dough, and knead for 8–10 minutes until smooth and elastic.

    Give it time to rise

    Cover the bowl and let the dough rise for about 60 minutes, until roughly doubled. Do not taste raw dough or flour.

    Shape the base

    Heat the oven to 475°F/245°C with a rack in the lower third. Brush a sturdy metal baking sheet with the teaspoon of oil. Use the shaping flour to stretch the dough into a 12-inch round. Rest it, covered, for 10 minutes if it resists stretching.

    Add sauce and cheese

    Move the dough to the prepared sheet. Spread the sauce over it, leaving a 3/4-inch border. Scatter over the mozzarella, Parmesan, and oregano.

    Bake until cooked through

    Bake for 14–18 minutes, until the edges and underside are golden and the center is fully baked. If the top is coloring faster than the base, move the sheet down one rack. Let the pizza settle for 3 minutes before cutting.

Refrigerate covered leftovers within 2 hours and use within 3 days. Reheat at 375°F/190°C until the center reaches 165°F/74°C. Freeze individual wrapped slices for up to 2 months for best quality.
